First light the tandoor.
When hot add some diced butternut squash tossed in olive oil, thyme, garlic, salt and pepper to a foil tray. Put it in the tandoor for 40 minutes.
Meanwhile make flatbed by mixing 1 cup of white flour with 1/2 cup yoghurt, a tap of baking powder and tap salt. Make four breads and press slices of red pepper into the dough. In the flat bread.
Remove the squash and keep warm.
Cook the breads on the side of the oven. Butter them and keep warm.
Then roast some lamb leg steaks marinated in any flavour you like. I used chimichuri. Cook for about 4 minutes each side.
All that took one hour so after that I baked a loaf of bread in a cast iron pot inside the tandoor which was still showing 225 C. After 30 minutes I removed the loaf from the pot Nd finished it on the rack over the coals for another 10 minutes. Everything tasted fantastic. We ate everything very greedily. We had the bread for breakfast Sunday morning with my home made Marmalade. Heaven!
